Twisty, and it’s from Fuzhou

Li zhu pork.jpgslight ginger taste. Wow, Twisty, sugar glazed snacks with a ginger after-taste kick to them. I get the impression that this is what Fujianese cuisine is about.

Sweetness with a slight ginger after taste. I say this because earlier in the week I’d eaten Fujianese pork which they are famous for. It was not unlike sweet and sour pork from Hong Kong. Chunks and pieces of pork coated in some sort of batter and then served in a sweet and ginger sauce. It has my approval, but the twisty snacks I shared with my work mates met with mixed reviews.

*They also have this kind of snack in Guangzhou but without the sugar-ginger glaze.

  1. Use of the word ‘glaze’ onto something re Fujianese cuisine. To the French go the honours. Haute cuisine is based on French chefs, since the Revolution (when their aristocrat employers met Dr Guillotin’s device) having to open restaurants and continually experiment with sugar etc. Transforming the raw food into something that the best housewife cook couldn’t do.

    So…’glazed’…pastry but also the pork ‘lizhi ruo’ (in Fuzhouhua, but sounds as if a drunk PE teacher was telling niece Lisi to row in the first 8 with more effort!). Was sugar, needed for glazes, on fruit or the sweet and sour pork in China before 1800 or whenever it arrived? I suppose they had bees producing honey to give a similar effect and plums, apricots but…

    • It might be a sugar glaze, I don’t know for sure. Hiwever, honey is simply a lot of (fructose) with some water mixed in.
